College Cooking with Cori: Fast & Easy Breakfast Bagel

When I am rushing out of the door in the morning, nothing sets my day off worse than neglecting to eat breakfast. My snoozing habit hit its all-time low last year when I hit that button once every nine minutes for…over five hours. Now, I have gotten much better, reducing my average to 30 minutes, but that still only leaves me with about an hour to pop out of bed, wash up, get dressed, pack my bag, and … oh yeah, BREAKFAST!

Instead of splurging and relying on campus dining, I have begun a quick routine to make sure I have something warm and yummy to eat on the way to school.

One of my absolute favorites is the breakfast sandwich. It fits in my hand so that I can easily eat it on-the-go, and mmm are they delicious.

They come in many varieties so my appetite is ever-so pleased.

To make your very own here are some suggestions:

 1. Start with what you have.

Often times, left overs go unused because they look unappetizing in comparison to that cheesy pizza you just ordered. But they turn to gold when you are starving and running late in the morning.

2. Stick to what you love.

Your body doesn’t always crave what it needs, so watch out with this one. By this I mean, no, “donut-buns” do not constitute a sandwich. But that doesn’t mean you can’t enjoy what you are eating. My personal preference is to make my food colorful. If it looks good, it tastes better. But don’t be afraid to experiment with new flavors, like peanut butter and cheese, you may be surprised.

3. Think easy.

Just because you are rushing doesn’t mean  you have to become mad scientist, unless you want is to show up to a meeting and realize you have egg yolk splattered all over your hair. Instead, think simple. If you are making an egg sandwich, what is the easiest and fastest way you can make an egg?

4. If all else fails, do this:

  • Select a bread (bagel, English muffin, tortilla etc.) on hand and put it in the toaster or oven.
  • Heat a skillet over medium heat, add a few drizzles of fat (coconut oil, olive oil, butter, etc.)
  • Once warm, crack 1-2 eggs directly into the pan.
  • Attack the yolks with your spatula to break them.
  • Get your bread  out of the toaster [oven].
  • Add toppings. (hummus, baby spinach, cream cheese, honey mustard, tomato slices, cheese, avacado, olives, onions, pickles, whatever is on hand)
  • FLIP! THOSE! EGGS!!!
  • Wait… (Prepare a container or aluminum foil for easy take-away.)
  • Turn the stove off, add egg to the rest of the bagel, and voila!
  • You have breakfast.

Breakfast truly is the most important meal of the day. Like much of what is done in the morning, what you eat then has a large impact on the rest of your day. Here’s to a new breakfast and a brighter morning, cheers!
